California Style Skillet Frittata.*

Recipe Developed While Cruising in Mexico.


  • 2 potatoes, peeled and sliced

  • 1 green pepper, seeds and diced

  • ½ large yellow onion, diced (cumin seeds work too)

  • 6 large eggs

  • Milk,

  • Salt and pepper, to taste

  • 2 Tbsp. olive oil


  • Sauté potatoes, onion and green pepper in olive oil over medium heat for ~4 minutes.

  • While the vegetables are cooking, mix eggs with milk and salt and pepper in a bowl.> Pour egg mixture over vegetables and place cover on skillet. Reduce heat to low, and continue cooking for ~8 minutes. Remove from heat and serve with Tabasco sauce or chili sauce.
