½ large yellow onion, diced (cumin seeds work too)
6 large eggs
Milk,
Salt and pepper, to taste
2 Tbsp. olive oil
Directions:
Sauté potatoes, onion and green pepper in olive oil over medium heat for ~4 minutes.
While the vegetables are cooking, mix eggs with milk and salt and pepper in a bowl.> Pour egg mixture over vegetables and place cover on skillet. Reduce heat to low, and continue cooking for ~8 minutes. Remove from heat and serve with Tabasco sauce or chili sauce.
