Ode To Fish Tacos

Hola Amigos y Amigas,

I was just sitting aboard here in Bahia de Zihuatanejo Mexico waiting for another green flash , pondering the nature of fish tacos.   I know you all suspect that in the beginning, there was light.   But is there anyone amongst you who can truthfully deny that not too long thereafter must have come the fish taco?   I mean, just think about it.   Darwin figured out life sprang from the sea decades ago.   It's only common sense that the fish taco had to have come shortly thereafter, and by the way long before Jimmy Buffet's cheese burger in paradise.   I mean geez', there are tuna tacos, Dorado tacos, shrimp tacos, cod tacos, shark tacos, sea bass tacos...   I'd even make a not too speculative bet that there are probably a few fish tacos I've not even tasted or even heard of yet.

And furthermore, Mexico is a natural for the fish taco.   A   good taco  starts with a fresh tortilla, and you all know that Mexico is no slouch when it comes to making tortillas!   Just start with one of those fresh tortillas, add a little hot sauce for spice, some cheese, sour cream, avocado, barbecued fish of choice, and voile!!   A gourmets delight.   Then top it off with a little fresh cut lemon or lime.   That way, you're good to go when it comes time for the margaritas .

Oh yeah, I nearly forgot.   You need the margarita to wash down the fish tacos, and the margarita is a just a good tequila, an orange liquor, three large ice cubes, and a lemon or lime squeeze.   Does anyone see the yin yang effect in play here?   If not, let me spell it out.   The lime you squeeze on your taco serves double duty in your margarita!   Talk about synergy!!   Tacos, margaritas, tacos, margaritas...

And on a slow day, you could even do the cerveza thing, because as you all know well, it is standard operating procedure here in Mexico to rinse the open end of the beer bottle with a lemon or lime (the one left over from the fish tacos).   Supposedly, it's something about the acid in the citrus that cleans up any residual germs on the fighting end of the bottle, but I'd guess more likely, it's just a beer lovers thing.

I'd venture to guess that one could get so worked up over the how tightly coupled the taco and margarita are, that you could forget all about that green flash.   But that's for the philosophers among you to figure out...
